That’s one thing that saddens me about summer – no more oatmeal. It’s just not the same satisfaction on a hot day as it is when it’s cold.
Revolutionary idea: overnight oats. Soaked in yogurt, milk, and spices.
Oatmeal is definitely one thing that I miss when the weather starts to get warm and sunny. But no longer. Now I we can enjoy oatmeal all year-round! Isn’t that just what you’ve been waiting for? Aren’t just so excited that you just can’t stand it??
Cold oatmeal is kind of wonderful. It’s all creamy and soft and chilly. Oh, I’m sorry, is that really weird? Don’t judge. It’s especially delectable with chopped strawberries, stolen from the dining hall. I mean…what?
Topped with crunchy granola and almonds, this is the perfect summer time oatmeal.
Summertime overnight oatmeal
inspired by Pepper Lynn
1/2 c rolled oats
1/2 c plain Greek yogurt
2/3 c milk
1/4 t cinnamon
Mix all ingredients together and place in a jar; cover and place in the refrigerator overnight. The next morning, mix in any of the following:
-strawberries, granola, almonds
-banana, honey, chopped almonds
-raspberries, blackberries, pistachios
-banana, figs, walnuts
-raspberries, dark chocolate chips, almonds
-coconut, dark chocolate chips, strawberries
-raspberries, banana, coconut, granola
-peaches, almonds, nutmeg
-peaches, blueberries, granola
-strawberries, banana, pecans
-apples, cranberries, granola
-blueberries, orange zest
-strawberries, lemon zest
-strawberries, orange zest
-chocolate chips, coconut, almonds
-chocolate chips, banana, bacon
Really, just add whatever your little heart desires.
