Layered pumpkin pie parfait
adapted lightly from Healthy Food For Living
serves 1
In the bowl of a small food processor, pulse together 1/2 cup of pumpkin butter with 1 ripe-overripe banana. Blend until creamy and smooth. Layer between dollops of plain yogurt (I prefer the Greek stuff!) and top with granola. Slurp it up!
If you didn’t make the pumpkin butter, then add 1/4 cup chopped dates, 1/4 teaspoon vanilla, 1/2 cup pumpkin puree, 1/2 teaspoon ground cinnamon, and 1/4 pumpkin pie spice. If you want to make your own pumpkin pie spice, do that here. Do add the cardamom.
