So here it is.

I’m not gonna even try to dance around it.

Summer peach salsa
adapted from Cooking Light
yields 4 servings

the salsa: 1 c peaches, peeled and chopped (I like for the peaches to be about the same size as the tomatoes)
1/2 c cherry tomatoes, halved
1/4 c red onion, diced
3 T fresh mint leaves, minced
3 T fresh basil, minced
juice of 2 lemons
1 T olive oil
1 T honey
1/4-1/2 T crushed red pepper flakes (depending on the heat you like in your salsa – I like it on the spicier side, especially considering the sweetness of the peaches)
salt + pepper

>>Toss all ingredients together in a medium sized bowl. Consume at once or let flavors get to know each other for up to a few hours. Serve with chips, salmon, or truly as a salsa in wraps, bowls, or quesadillas. Or alone – you know.
