Edamame bean dip

This is super creamy and beany and avocado-y.

Definitely do make this.

Definitely do scoop it up with bell pepper, carrots, broccoli, cauliflower, tomatoes, and tortillas. Oh and chips.

Definitely do not blend with a blender. (Try to use a food processor unless you double the recipe.)

It was so good that I just inhaled it…

…I didn’t even think to snap a picture real quick.

I really am sorry. I wish you could see it.

Basically, my roommate asked me if it was a GIANT clump of wasabi.

That’s what it looks like.

Combine the following in the bowl of a food processor (or blender if you must):

1/3 c fresh shelled edamame
1/2 can cannellini beans
1/4 avocado
juice of half a lemon
pinch of garlic powder
touch of olive oil to get blending moving (optional)

Blend. Dip. Munch. Love.
