I definitely intended to go to the gym today and have a legit, hardcore, drenched in sweat, falling down from exhaustion workout.
Instead I ran on the treadmill for 10 minutes and called it a day.
Then I went home and made sweet potato fries.
Sweet but spicy sweet potato fries
serves 1-2
Preheat the oven to 350F. Cut 1 sweet potato into wedges or strips. Place on a foil-lined baking sheet, drizzle with 1 tablespoon of coconut oil, 1/2 teaspoon of cinnamon, and a pinch each of sea salt and cayenne pepper. Toss to coat sweet potatoes and spread out in a single layer. Bake for 10 minutes. Turn each wedge over, raise temperature to 400F, and bake again for 15-20 minutes. Your wedges should be nice and toasty brown.
These are like pumpkin pie on a stick!
